Dominick serves up ‘Lunch at the Library’

Chef Harry Dominick, Executive Chef of Edmundite Missions Enterprises and Director of the Bosco Nutrition Center at Edmundite Missions, was this month’s Lunch at the Library guest at the Selma – Dallas County Public Library.

“The library is happy to be supporting [Edmundite Mission’s] ministry,” said Selma – Dallas County Public Library Director Becky Nichols. “The proceeds from this lunch will go towards that ministry.”

Edmundite Missions V.P. of Program Integration and Chief Innovation Officer Susan Raymond took to the stage before Dominick to share a little about what work Edmundite Missions Enterprises does.

“100 percent of the net revenues from [Edmundite Missions] Enterprises goes toward feeding the poor at Bosco Nutrition Center,” said Edmundite Missions V.P. of Program Integration and Chief Innovation Officer Susan Raymond. “At the end of this year, we will have funded more than 6,000 meals.”

Raymond added that the organization has a focus on providing jobs and skills to the people of the community.

“If our 60,000 donors fell into the ocean tomorrow, every single person at Bosco could go out and get a job in the catering business,” said Raymond.

After Raymond’s remarks, Dominick began his demonstration.

Dominick showed the Lunch at the Library audience how to prepare a salad with a creamy avocado dressing, Black Belt Southern Shrimp and Chicken and Grits and peaches flambéed in Grand Marnier, peach schnapps and rum served over ice cream for desert.

The audience was also served a lunch featuring Dominick’s demonstrated recipes.

“All of these dishes are from me, from Selma,” said Dominick. “I’m trying to put Selma on the map.”
